Asian water buffalo are not to be confused with North American Bison. The North American Bison, though commonly called buffalo, are not true buffalos. They are more closely related to the domestic cow and are able to hybridize with cattle. Asian water buffalo are true buffalos. Although still bovines, true buffalos do not cross with cattle or bison. They are more closely related to the African Cape Buffalo. Asian water buffalo have been domesticated for 5000 years and are commonly found through Asia, India, northern African and eastern Europe as a source of meat, milk, and traction. Cook grassfed water buffalo the same as you would cook other grassfed meats. Expect grassfed red meats to cook in 1/3 less time than grain fed meats.
